The sweet breakfast bread kick continues. Next up sweet potato banana bread. If you haven’t noticed we eat a lot of bananas around here. Bananas make a great base for most naturally sweet breads. You could probably sub in applesauce and get a similar bread. I prefer the sweetness and texture of bananas though.
The kids have come accustomed to having baked bread – almost like breakfast bread around for snacks. Whitaker – now almost seven months, and Eli whose two, have been really loving the banana nana bread and the chocolate zucchini bread.
When the kids go to eat something I think more about what goes into it versus when it is me or Ryan. I don’t want them to eat straight sugar. I don’t want them to eat white flour. I want them to grow up to be healthy and strong. So while we have lots of sweets around the house, I am trying to create a balance. We can’t eat chocolate cupcakes with white buttercream frosting everyday. Some days, but not every day.
This sweet potato banana bread is perfect for breakfast or an afternoon snack. I am trying to make something that Ryan can eat before he goes to the gym in the morning. He doesn’t usually want to eat much, but needs a little something. This bread has a little of healthy fat (bananas and eggs), healthy carbs (sweet potato and whole wheat flour), and a little bit of protein (eggs and almond flour). It is great for the kids (no added sugar, whole grain, fruit and a vegetable). Its sweet, but not too sweet.
You could make it vegan by substituting in “flax egg” for the eggs.
This is part of my goal to cut back on the processed snack-what-not in the house. For years we had all the chips, granola bars, animal crackers, etc. I was the worst. (I can still provide a dissertation on the different types of animal crackers and animal cookies). I have tried to make it a habit to bake a loaf or two of a healthier bread every week for quick breakfasts or better snacks.
We have also been working on homemade lara type bars, protein bars, granola snack bars, but that is for another day.
Today is sweet potato banana bread.

Sweet Potato Banana Bread
- Coconut oil and flour for greasing and dusting loaf pan
- 2 ripe bananas
- 1 medium-large sweet potato, cooked, peeled, mashed (yield around 1 cup)
- 3 large eggs
- 1 teaspoon vanilla
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup flax seed ground
- 1/2 cup almond flour
- 1 cup whole wheat flour
Preheat oven to 350 degrees F. Grease pan with coconut oil and dust with flour. Quickest way to cook the sweet potato is to prick with a fork four or five times, microwave on high for five minutes, wrapped in a towel. Remove and peel off skin. In a large mixing bowl, mash bananas and sweet potato. Mix in eggs. Add vanilla, baking powder and salt. Continue mixing. Add flax seed and flours. Transfer to loaf pan. Bake for 40 minutes and check for doneness. Remove from oven to cool.
